Dinner Rolls

1/2 cup warm water (105-115 F)
2 packages yeast
1 tsp plus 1/3 c sugar
3/4 cup mill, heated to 105-115 F
4 tbsp butter, softened
3 3/4 c flour
1 1/2 tsp salt
2 large eggs
1 egg yolk mixed with 1 tbsp water

in large bolw, combine warm water, yeast, and 1 tsp sugar, stirring to dissolve. Let stand 5 minuts, until foamy.

with wodden spoon, mik in warm mik, butter, 1/2 c flour, remaining 1/3 c sugar, salt and eggs to make a thick batter. continue stirring two minutes, scraping bowl often. add 3 c flour to make a soft dough.

turn dough onto lightly floured surface and knead ~ 10 minutes, until smooth and elastic, adding 1/4 c more flour as necessary to keep dough from sticking. shape dough into ball and place in greased large bolw, turning dough over to grease top. cover and let rise in warm place (80-85F) until doubled, about 1 hour.

punch dough down. turn onto lightly floured surface. cover and let rest for 15 minutes.

grease large cookie sheet or miffin pan. shape dough into rolls. ocver and let rise until doubled, 30 minutes.

bake at 400F 10-12 minutes, rotating between racks halfway through.

makes 24 rolls.
